Kale!

Too many people see kale simply as a way to dress up a plate and then is left for compost after a meal has been devoured. But what you should know is that it is one of the most nutrient rich greens on our planet! Studies have shown that kale has the power to stave off cancer; reduce chances of cataracts, rheumatoid arthritis, emphysema; and provides an excellent energy boost.
Kale offers a strong dose of vitamin A, chlorophyll, vitamin C, calcium, iron, folic acid and potassium.
Ways to prepare:
- Juice a handful of leaves
- Eat it raw (very few people enjoy this method)
- Saute in olive oil with fresh garlic
- Find a great recipe
